Pulled Chicken Rolls with Pickled Apple and Cabbage Slaw
Ingredients
- 1 tbsp ground cumin
- ½ tsp chilli flakes
- ½ cup apple cider vinegar
- ½ cup chicken stock (or water)
- ½ cup BBQ sauce
- 1 roasted chicken, meat removed and shredded with a fork
- 1 tsp caster sugar
- ½ lemon, juiced
- 1 Granny Smith apple, peeled and cut into matchsticks
- ¼ small red cabbage, shredded
- 2 spring onions, finely sliced
- ½ cup Praise Classic Aioli
- Sea salt and fresh ground black pepper
- 4 buns
How to make it
- Combine the cumin, chilli, ¼ cup apple cider vinegar, stock and BBQ sauce in a saucepan. Bring to the boil then remove from heat. Pour over shredded chicken and combine.
- Combine sugar, remaining apple cider vinegar and lemon juice in a bowl until dissolved. Add apple matchsticks and marinate for 10 minutes.
- Separately combine cabbage, spring onion and aioli then season with salt and pepper. Drain and add pickled apples.
- Toast buns under the grill. Top with pulled chicken and apple slaw then serve.
