Ingredients

  • 1 tbsp ground cumin
  • ½ tsp chilli flakes
  • ½ cup apple cider vinegar
  • ½ cup chicken stock (or water)
  • ½ cup BBQ sauce
  • 1 roasted chicken, meat removed and shredded with a fork
  • 1 tsp caster sugar
  • ½ lemon, juiced
  • 1 Granny Smith apple, peeled and cut into matchsticks
  • ¼ small red cabbage, shredded
  • 2 spring onions, finely sliced
  • ½ cup Praise Classic Aioli
  • Sea salt and fresh ground black pepper
  • 4 buns

How to make it

  1. Combine the cumin, chilli, ¼ cup apple cider vinegar, stock and BBQ sauce in a saucepan. Bring to the boil then remove from heat. Pour over shredded chicken and combine.
  2. Combine sugar, remaining apple cider vinegar and lemon juice in a bowl until dissolved. Add apple matchsticks and marinate for 10 minutes.
  3. Separately combine cabbage, spring onion and aioli then season with salt and pepper. Drain and add pickled apples.
  4. Toast buns under the grill. Top with pulled chicken and apple slaw then serve.
