Crumbed Chicken Salad with Sweet Chilli Mayonnaise
Ingredients
- 1 cup fine breadcrumbs
- ¼ cup parsley leaves, finely chopped
- Sea salt and fresh ground black pepper
- 2 chicken breasts, sliced
- Olive oil
- ½ cup Praise Whole Egg Mayonnaise
- ¼ cup sweet chilli sauce
- 1 lemon, juiced
- 2 baby cos lettuce, washed and chopped roughly
- 1 punnet cherry tomatoes, halved
- ¼ red onion, sliced
- 4 eggs, hard boiled, peeled and quartered
How to make it
- Preheat oven to 200°C.
- Combine breadcrumbs, parsley and salt and pepper in a bowl and crumb chicken pieces by pressing flat.
- Place crumbed chicken onto greased tray, drizzle with olive oil and roast until golden.
- Combine mayonnaise, sweet chilli sauce and lemon juice in a bowl. Arrange lettuce, tomatoes, onion, eggs and chicken on a platter. Drizzle dressing on top and serve.
