Ingredients

  • 1 cup fine breadcrumbs
  • ¼ cup parsley leaves, finely chopped
  • Sea salt and fresh ground black pepper
  • 2 chicken breasts, sliced
  • Olive oil
  • ½ cup Praise Whole Egg Mayonnaise
  • ¼ cup sweet chilli sauce
  • 1 lemon, juiced
  • 2 baby cos lettuce, washed and chopped roughly
  • 1 punnet cherry tomatoes, halved
  • ¼ red onion, sliced
  • 4 eggs, hard boiled, peeled and quartered

How to make it

  1. Preheat oven to 200°C.
  2. Combine breadcrumbs, parsley and salt and pepper in a bowl and crumb chicken pieces by pressing flat.
  3. Place crumbed chicken onto greased tray, drizzle with olive oil and roast until golden.
  4. Combine mayonnaise, sweet chilli sauce and lemon juice in a bowl. Arrange lettuce, tomatoes, onion, eggs and chicken on a platter. Drizzle dressing on top and serve.
