Crunchy Chicken Noodle Salad with Lime Mayonnaise
Ingredients
- 1 barbecue chicken (3 cups), flesh shredded
- ½ Chinese cabbage (wombok), finely shredded
- 1 red capsicum, seeded, thinly sliced
- 1 carrot, shredded
- 4 green onions, thinly sliced
- ½ cup Praise Whole Egg Mayonnaise
- ¼ cup lime juice
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 100g packet crunchy Asian noodles
- 1/3 cup chopped roasted cashews
- Coriander, mint leaves, to serve
How to make it
- In a large serving dish combine chicken, cabbage, capsicum, carrot and onion.
- In a jug, combine mayonnaise, lime juice, fish sauce, soy sauce and brown sugar. Toss half through salad.
- Sprinkle salad with noodles, cashews and herbs.
- Drizzle with remaining dressing.
