Crisp Chorizo Tomato Salad with French Dressing
Ingredients
- 6-8 large beefsteak tomatoes (large field tomatoes if unavailable)
- 1 small red onion, sliced
- ¼ cup chopped flat leaf parsley
- 2 tbsp hand torn basil leaves
- 3 cloves garlic, thinly sliced
- ¼ cup olive oil
- 2 chorizo sausages, sliced
- ¼ cup Praise French Dressing
How to make it
- Chop the tomatoes roughly and add sliced onion. Season generously with salt and pepper and herbs and toss.
- Heat olive oil in a small pot over low to medium heat and add chorizo slices. After a couple of minutes add the garlic watching carefully so it doesn’t burn. Just as the garlic begins to colour remove chorizo and garlic and add to tomatoes.
- Add French dressing and a couple of spoons full of the chorizo oil and toss.
