Ingredients

  • 200g cooked chicken breast
  • 2 baby cos lettuce
  • 1 large cucumber, peeled and quartered length ways and chopped
  • into large cubes
  • 2 large Granny Smith apples, washed and sliced
  • ¼ cup dried cranberries
  • 1 cup Praise Whole Egg Mayonnaise
  • 1 tsp hot water (optional)
  • Juice of ½ lemon
  • ¼ cup chopped dill
  • ½ tsp whole grain mustard

How to make it

  1. Slice or shred cooked chicken into bite size pieces.
  2. Combine mayonnaise, lemon juice, dill and mustard in a small bowl. Add hot water if desired (for a thinner mayo) and season to taste.
  3. Arrange baby cos leaves on large platter. Top with cubed cucumber, apple slices and sprinkle over cranberries.
  4. Add chicken and drizzle dressing over the top.
