Chicken Cucumber Apple Dill Salad
Ingredients
- 200g cooked chicken breast
- 2 baby cos lettuce
- 1 large cucumber, peeled and quartered length ways and chopped
- into large cubes
- 2 large Granny Smith apples, washed and sliced
- ¼ cup dried cranberries
- 1 cup Praise Whole Egg Mayonnaise
- 1 tsp hot water (optional)
- Juice of ½ lemon
- ¼ cup chopped dill
- ½ tsp whole grain mustard
How to make it
- Slice or shred cooked chicken into bite size pieces.
- Combine mayonnaise, lemon juice, dill and mustard in a small bowl. Add hot water if desired (for a thinner mayo) and season to taste.
- Arrange baby cos leaves on large platter. Top with cubed cucumber, apple slices and sprinkle over cranberries.
- Add chicken and drizzle dressing over the top.
