BBQ'd Sweet Potato with Coriander Lime Mayo
Ingredients
- 2 large sweet potatoes, peeled and sliced into 1cm rounds
- Peanut oil
- 1 cup roasted cashew nuts
- 1 bunch coriander (roughly chopped)
- ½ cup crispy noodles (optional)
- 1 lime zest
- 1 cup Praise Whole Egg Mayonnaise
- Juice of ½ lime
- 1 tsp red curry paste
How to make it
- Preheat BBQ grill. Toss the sliced sweet potato in enough peanut oil to coat and grill the slices until tender (about 5 mins). Remove from heat and allow to cool.
- In a small bowl, mix together the mayo, lime juice, red curry paste and half the chopped coriander. Season with salt and pepper to taste.
- Gently toss together the sweet potato, cashews, remaining coriander and crispy noodles on a serving bowl or plate and drizzle with lime mayonnaise dressing. Sprinkle with lime zest to finish.
