¼ small seedless watermelon, skin removed, cut into chunks 200g feta 200g mixed salad leaves ½ red onion thinly sliced 1 cup Praise Balsamic Dressing 1 cup fresh mint leaves 1 tbsp lemon zest 1 cup roasted pistachios, chopped
Place watermelon and sliced onion in a bowl. Pour over Balsamic Dressing. Marinate for 5 minutes before serving.
Lay a bed of mixed salad leaves on a platter, and top with marinated watermelon mix. Sprinkle with pistachios, feta, mint leaves and finish with lemon zest.
