Raspberry French toast muffins

Cooking spray, for pan

12 slices Nature’s Fresh White Toast (FYI - this recipe is great for using up old bread)

6 eggs

1 1/2 cup milk

1 tbsp granulated sugar

2 tsp. pure vanilla extract

1 tsp ground cinnamon

1 cup of frozen raspberry

1/2 banana finely chopped

Icing sugar, for serving

Maple syrup, for serving


  1. Preheat oven to 180° and grease a 12-cup muffin tin with cooking spray.
  2. Cut bread into 2cm cubes and set aside.
  3. In a large bowl, beat eggs, milk, sugar, vanilla, cinnamon, and salt until mixture is smooth. Add bread pieces and toss until the bread has absorbed most of the liquid.
  4. Add frozen raspberry and banana
  5. Divide mixture between muffin tin cups, pressing down lightly on each to make muffin more compact.
  6. Bake until bread is toasted and muffins are cooked throughout, 15 - 20 minutes.
  7. Dust with powdered sugar and serve immediately with maple syrup.
