Vegetarian Burger

  • Mackenzie Sprouted Grains burger buns

Chickpea Patties (makes 4-6)

  • 2 cups cooked chickpeas (garbanzo beans)
  • 1 stalk celery (diced)
  • Herb salad
  • 1 carrot (grated)
  • 1/2 onion (minced)
  • 1/2 tsp garlic powder (or other seasoning)
  • 1/4 cup flour
  • Salt & pepper to taste
  • Vegetable oil (for frying)

To Serve

  • Mackenzie Sprouted Grains burger buns
  • Chickpea patty
  • Landful of herb salad
  • 1 Large chargrilled capsicum (sliced)
  • 1 Large chargrilled courgette (sliced)
  • 1T Tzatziki per burger
  • 1T Pesto per burger

For the patties, mash cooked chickpeas using a potato masher or a large fork. You can leave a few little lumps.

In a large bowl, mash in celery, carrot, onion and a little flour. Season well.

Form your mixture into patties and lightly pan-fry for 3-4 minutes on each side until golden brown.

Once done, lightly toast MacKenzie Sprouted Grain burger buns in the oven.

To assemble spread one half of the bun with Tzatziki. Add chargrilled vegetables and the patty. Add a dollop of pesto and even a little more of the Tzatziki. Place the remaining bun half on top, serve and be prepared to be asked for seconds!

MacKenzie Chef Tip

  • If you're using fresh chickpeas, you can cook them a little past tender so they'll be easier to mash, but do be sure to drain them well. If you're using canned chickpeas or garbanzo beans, drain well and give them a quick rinse.
  • Make sure your pan or grill is well heated before you place your chickpea patties in them, to avoid them sticking to the pan.
