The F.A.T with Japanese Chilli

Serves : 4



  • 2 ripe avocados, halved and stoned
  • 2 Tbsp fresh mint, finely chopped Salt (optional) and Pepper
  •  2 Tbsp lime or lemon juice
  •  1⁄2-1 tsp Jalapeno sauce (optional)
  •  150g feta cheese, crumbled
  •  1 spring onion, finely sliced
  •  150g cherry tomatoes, halved
  •  4 MacKenzie Sprouted Grains and Chia muffin splits, halved and toasted
  •  4 Tbsp Extra virgin olive oil
  •  Extra mint (garnish)
  •  1⁄4 tsp Nanami Togarashi (optional)


Chop the avocados and place in a bowl with the mint, salt (if using, but feta is salty), pepper, lime or lemon juice and Jalapeno sauce (if using).

Just blend with a fork and add crumbled feta. Pile onto toasted muffins and drizzle lightly with olive oil, a little more black pepper and top with herbs for garnish. Try a light sprinkle of Nanami Togarashi for an extra kick.

Serve with the tomatoes and spring onion mixed together with a kiss of olive oil.
