Surf Burger

Surf Burger

Ingredients

4 white fleshy fish fillets
1/4 cup plain flour
1/2 teaspoon hot paprika
Salt and pepper to taste
40g butter
1 cup shredded cabbage, mix of purple and green
1 carrot, julienned
1/2 red onion, finely sliced
2 teaspoons sesame oil
Juice of 1 lime
1/4 cup coriander, roughly chopped
1/2 cup mayonnaise
Zest and juice of 1 lime
1 clove of garlic, minced
1 cup mesclun salad greens
4 Mackenzie Sprouted Grain Burger Buns

Method

Cut the fillets into burger sized pieces.

Place the flour, paprika, salt and pepper in a bowl and mix. Coat the fish in the flour mixture.

Place a frypan over a medium heat and add the butter. Dust off any excess flour from the fish and fry for 2 - 3 minutes on each side or until golden brown.

In a large bowl, combine the cabbage, carrot, red onion, sesame oil and juice of 1 lime.

In a small bowl, combine the coriander, mayonnaise, zest and juice of 1 lime and minced garlic.

On a barbecue or in a skillet pan, grill the burger buns until golden brown.

To serve, smear a generous spoonful of coriander and lime mayonnaise on the base and top of each burger bun. Top base with mesclun leaves, fish fillets, slaw and top half of burger bun.
