Spicy Crumbed Chicken

Hot Spicy Burger

Ingredients

Spicy Crumbed Chicken
4 boneless & skinless chicken thighs
2 eggs
1/2 cup flour
1 1/2 cups panko crumbs
1/3 cup finely grated parmesan cheese
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon hot paprika
Salt & pepper to taste
2 tablespoons olive oil

Slaw
1 cup shredded cabbage, mix of purple and green
1 carrot, julienned
1/2 red onion, finely sliced
1/4 cup coriander, roughly chopped
1/2 cup mayonnaise
Zest and juice of 1 lime
1 clove of garlic, minced

Guacamole
2 avocados, mashed
1/2 red capsicum, cubed
1/2 small red onion, diced
1/3 cup coriander leaves, roughly chopped
1 lime
1 teaspoon sweet chilli sauce
Salt and pepper to taste

To Serve
1/2 cup garlic aioli
2 tablespoon of chipotle sauce, plus extra to serve
12 slices of jalapeño
4 Mackenzie Sprouted Grain Burger Buns

Method

Spicy Crumbed Chicken
Preheat the oven to 190°C and line a baking tray with baking paper.

In a bowl, combine the breadcrumbs, paprika, grated parmesan, cumin, oregano, paprika and salt and pepper. 

Lightly coat the chicken thighs with flour and then dip into the whisked eggs. Drop chicken into breadcrumb mixture and coat. Dip back into the egg and then back into the crumb. Double crumb makes it so much tastier!! Place on the baking tray. Repeat with remaining chicken thighs. Drizzle a little olive oil on top of each chicken thigh and bake for 20-30 minutes or until golden brown, turn half way through cooking.

Slaw
In a large bowl, combine the cabbage, carrot, mayonnaise, zest and juice of lime and minced garlic.

Guacamole
Place avocado flesh in a medium sized bowl and mash until semi-smooth with he back of a fork. Add remaining guacamole ingredients and mix to combine.

To Serve
On a barbecue or in a skillet pan, grill the burger buns until golden brown.

Smear a generous spoonful of guacamole on the base of each burger bun. Top with slaw, crumbed chicken, jalapeños, chipotle mayo and top half of burger bun. Add a little chipotle sauce for an extra kick!
