Smashed peas and feta on Toast


  • 2 cups frozen or fresh peas

  • 1 clove garlic, peeled

  • 4-6 tablespoons olive oil, plus extra for drizzling

  • 4 slices MacKenzie High Country Bread, toasted

  • About 75g feta, thinly sliced or crumbled

  • Few mint leaves, torn

  • Lemon wedges for squeezing


Boil the peas and garlic clove in a small amount of lightly salted boiling water until tender. Drain and refresh under cold water. Drain well again.

Place peas in a food processor with the garlic and process until roughly chopped. Drizzle in the olive oil through the feed tube until you have a rough green paste.

Season with salt and freshly ground black pepper.

Spread the pea mixture over the toasted bread slices and top with feta. Drizzle with extra olive oil and finish with mint leaves. Pass lemon wedges for squeezing over the peas and offer the black pepper grinder for extra pepper.
