Chickpea Patties (makes 4-6)
For the patties, mash cooked chickpeas using a potato masher or a large fork. You can leave a few little lumps.
In a large bowl, mash in celery, carrot, onion and a little flour. Season well.
Form your mixture into patties and lightly pan-fry for 3-4 minutes on each side until golden brown.
Once done, lightly toast MacKenzie Sprouted Grain burger buns in the oven.
To assemble spread one half of the bun with Tzatziki. Add chargrilled vegetables and the patty. Add a dollop of pesto and even a little more of the Tzatziki. Place the remaining bun half on top, serve and be prepared to be asked for seconds!
